The celebration of the XV Anniversary of the founding of the Centro de Investigaciones en Comportamiento Alimentario y Nutrición (CICAN) of the University of Guadalajara, currently Instituto de Investigaciones en Comportamiento Alimentario y Nutrición (IICAN), motivated the generation of this special volume. The objective is to commemorate the arduous research work carried out during the last 15 years by researchers and students, who, convinced to get involved in the study of Eating Behavior, have conducted basic and applied research in this area of knowledge. We are confident that, with the passage of time, we will be able to convert this area, which relies on other sciences to explain the food phenomenon, into a scientific discipline that other sciences will also rely on to generate tools to support the resolution of problems related to food and health. The conceptualization of feeding behavior understood as “everything that organisms do to feed themselves” has been the guide that has allowed us to build the knowledge generated from CICAN - IICAN, which has created our identity as researchers in this area of study.
