In recent years, scientific evidence on the relationship between diet and health in childhood has grown exponentially, given the negative health effects associated with the frequent consumption of ultra-processed foods and the decline in the consumption of fresh foods such as fruits, vegetables, and whole grains. In Mexico, this phenomenon is reflected in an alarming increase in chronic non-communicable diseases such as obesity, diabetes, and hypertension, identified not only in the adult population but also in children and adolescents. Given this situation, school food environments are emerging as a strategic space for intervening in the development of healthy habits from an early age. Recent research highlights how the availability of convenience stores and exposure to advertising ultra-processed products in school vicinity contribute to the increase in children's BMI. Despite the efforts of the relevant authorities to offer healthier options, children's food preferences continue to lean toward high-calorie products with little nutritional value, influenced by family, socioeconomic, and emotional factors. In response, the Mexican government has promoted regulatory strategies such as the 2024 Guidelines and the "Healthy Living" initiative, which aim to transform school environments into spaces that promote health. Within this framework, cooperatives and programs like School Breakfasts can play an important role if managed with pedagogical and nutritional criteria. However, challenges persist related to the acceptance and incorporation of healthy foods, as well as a lack of institutional coordination and shared family responsibility in creating favorable school food environments. This perspective highlights the urgent need to address children's nutrition from a multidimensional perspective, considering the role of the school food environment in influencing children's food preferences, and implementing public strategies aimed at promoting healthy eating habits.
