La moralización de la alimentación saludable desde una mirada psiconutricional

En los últimos años, la alimentación saludable ha adquirido una creciente relevancia dentro de los discursos de salud pública, la cultura wellness y las redes sociales. Aunque promover hábitos alimentarios saludables es un objetivo de la salud pública, este puede llegar a favorecer que las elecciones alimentarias trasciendan su dimensión nutricional para adquirir un significado moral, en el que determinados alimentos y prácticas alimentarias suelen ser percibidos como buenos o malos y utilizados como indicadores de disciplina, autocontrol y responsabilidad individual. Esta perspectiva analiza de manera crítica el proceso de moralización alimentaria desde sus antecedentes históricos hasta sus manifestaciones contemporáneas, abordando el papel del healthism, la medicalización de la alimentación y la influencia de los entornos digitales en la consolidación de discursos que pueden moralizar los alimentos. Asimismo, se discuten las diferencias conceptuales entre moralización alimentaria, culpa, estigma y normalización dietética, con el fin de delimitar este constructo y evitar su uso indistinto. Finalmente, se examina la evidencia que vincula la moralización alimentaria con procesos como la rigidez cognitiva, la culpa alimentaria, la vergüenza, la restricción alimentaria y la ortorexia nerviosa, los cuales podrían incrementar la vulnerabilidad al desarrollo y mantenimiento de los Trastornos de la Conducta Alimentaria (TCA). Desde una perspectiva psiconutricional, se plantea la necesidad de ampliar el abordaje clínico más allá de la adherencia nutricional entendida como cumplimiento, incorporando la evaluación de significados, emociones, contexto, flexibilidad, funcionalidad y sostenibilidad de las recomendaciones alimentarias. Se concluye que el problema no radica en promover una alimentación saludable, sino en atribuir valor moral a las elecciones alimentarias, convirtiendo la alimentación en un criterio implícito para evaluar el valor personal. Por ello, se propone favorecer estrategias de educación alimentaria y atención nutricional que promuevan una relación con la comida más flexible, contextualizada, sostenible y libre de juicios morales.
